(BLANCO OR PLATA): This is the result of second distillation. It is crystal clear and does not require aging. Many purists swear by Silvers believing the taste of the Agave is more prominent.
GOLD (JOVEN OR ORO): Non-aged. Acquires it's color through authorized additives or colorings. Most commonly mixtos.
AGED (REPOSADO): Must be aged for a period of 2 months to 12 months. Reposados age in white oak barrels, or vats called "pipones"
EXTRA AGED (ANEJO): Must be aged for a period of at least one year and up to five years. The aging must occur in barrels with a maximum capacity of 600 litres. This contributes to a more pronounced appearance of wood in the color and flavor.
ULTRA AGED(EXTRA ANEJO): Aged for a period of more than 3 years. Aging occurs in barrels with a maximum capacity of 600 litres.
Guidelines contained in the NOM regulation allow for any of
these to be flavored.
